Money saving tip to anyone who wants a Dutch Oven that can take more heat - I bought a 400° dutch oven and like the one above it has a plastic knob. That plastic is the main thing keeping the heat rating down. The 500° oven cost about $40 more, so I just went to Home Cheapot and bought a metal knob for $3 and put it on. Have had no issues using it on things up to 480° and saved nearly $40 (when you include sales tax) in the process.
