We do freeze half of it when we open the bottle since there are only two of us in the house and we can't go through it that quickly. I've had the bottle sit in the fridge for a month and no mold. The expiration date is in May for the bottle we bought in March so I think it's probably good in the fridge for about 2 months. After that, you can just freeze it. Or you can freeze it immediately like Akansha suggested below.
